Fucoidan
Kelp contains a kind of dietary fiber called fucoidan, which is a sulfated polysaccharide that combines fucose and sulfate group.
It is the factor that makes seaweed sticky.
Fucoidan is found in the cell walls and between cells in kelp and seaweed, is said to have an antimicrobial effect which protects seaweed from microbes when they are damaged in the sea.
