Quercetin/Cycloalliin
Onions contain a type of polyphenol called quercetin and sulfur-containing amino acid called cycloalliin.
Quercetin is a yellow pigment and is contained in higher concentrations in the skin of onions than in the edible part.
Higher concentrations of cycloalliin occur in the edible part and it needs to be heat-treated to be extracted.
